This method still belongs to the natural process family, but it applies a more controlled and experimental approach to fermentation. Flavor Characteristics Dark Room Natural typically produces a fruit-forward profile with high sweetness, complex acidity, a juicy body, and winey or fermented fruit aromas—yet cleaner and more refined than conventional natural processes.
